VINIFICATION
Hand-picking and selection of the best grapes from the vineyard, careful transport to the cellar, the grapes are destemmed and then inoculated with selected yeasts. Fermentation temperature 24-27°C with daily pumping over. Fermentation and skin maceration time of about 20 days.
MATURATION
18 months in barriques and tonneaux of 500 liters, of which 30% new and 70% second passage
